My favorite thing with meal prepping is when it‘s fast, cost effective and high protein and fibers.
I found the perfect recipe for you, and if you’re a Trader Joe’s addict, your going to love this one!
For the grains
5 to 7 servings of quinoa
2 tbsp olive oil
thyme, salt, pepper
Vegan chorizo stew
1 portion of vegan chorizo (I used the TJ one)
1 to 2 cans of black beans (drained but not so much)
1 shallot or onion
Sweet potato & coconut spicy sauce
1 boiled sweet potato
3/4 can of coconut milk
Now let‘s go!
Cook the grains and once the water evaporated, add the olive oil and the thym.
In a separated pan, cook the onion For about 3/4 minutes, add the vegan chorizo, cook it for 3 and finally add the beans. Stir and let it cook for 5/10 minutes on low/medium heat.
For the sauce, mix all the ingredients together and season to taste.
Eat it together, with bread, I added cheese to it and a bit of cherry tomato cause it looked cute.
